Dill Tempeh (Tuna) Salad
This recipe is an excellent, spreadable vegan Tuna salad.
1 Block Tempeh (steamed whole for 15-20min)
1/4 Cup Diced Celery
1/4 Cup chopped fresh dill
2 Tbsp chopped Parsley
2 Tbsp chopped green onion, or chives
4 Tbsp Vegenaise
1/2 tsp Dijon Mustard
1 tsp Agave nectar
2 tsp Lemon juice
1/2 tsp salt
1/4 tsp garlic powder
Serves 2-4, 2 for sandwiches or 4 as an appetizer.
Prep time:10 min
Cook time: 15-20min.
Quarter your steamed Tempeh and place in a food processor. Pulse lightly until Tempeh looks crumbly.
Mix all ingredients aside from Tempeh in a large bowl, add Tempeh and mix well.
