This is one of my favorite summer recipes, it is so easy to whip up!
I have brought this dish to a lot of potlucks. From time to time I have set it down and wandered away, returning to find people that have no idea they aren’t eating chicken.
This is my favorite combination, but you can change it up and add your favorite salad ingredients. Some people prefer grapes, or apples, lemons or capers. Mix it up and find your perfect Tempeh salad 🙂
Cook Time: 15 minutes
Prep Time: 5 min
Chill Time: 2 hrs
Steam tempeh 15 minutes then let cool.
Cut Tempeh into 1/2 inch thick cubes. In a large bowl mix all remaining ingredients, add cubed Tempeh and chill for 2 hours.
Serves 4, makes approx 1 lbs.
I love to eat this with crackers as a snack. It also makes an excellent wrap with lettuce, tomato and purple cabbage.
This is also a great recipe as an ‘introductory to Tempeh’. Many people are intimidated or afraid to try tempeh, this recipe is so easy and so delicious.. and frankly you can’t mess it up. Accidentally put in too many pickles? Still delicious!
