Tempeh Mock Chicken Salad – Gluten Free
Super Easy Tempeh Mock Chicken Salad
This is one of my favorite summer recipes, it is so easy to whip up!
I have brought this dish to a lot of potlucks. From time to time I have set it down and wandered away, returning to find people that have no idea they aren’t eating chicken.
Cook Time: 15 minutes
Prep Time: 5 min
Chill Time: 2 hrs
1 block tempeh
2 tsp mustard
2 tsp Tamari
1 clove garlic – mashed
2 green onion stalks – chopped
1/2 cup Vegenaise
1 pickle – diced
1 celery stalk – diced
2 tbsp minced Parsley
Steam tempeh 15 minutes then let cool.
Cut Tempeh into 1/2 inch thick cubes. In a large bowl mix all remaining ingredients, add cubed Tempeh and chill for 2 hours.
Serves 4, makes approx 1 lbs.
I love to eat this with crackers as a snack. It also makes an excellent wrap with lettuce, tomato and purple cabbage.
